Two Michelin Star chefs from Ceredigion star in a new Apple TV documentary showing the pressure of the kitchen and quest for perfection.

“Knife Edge: Chasing Michelin Stars” follows 16 restaurants at pivotal moments in their journeys.

The first episode follows Gareth Ward at Ynyshir as he pushes for a third Michelin star but also receives a one star hygiene rating from Ceredigion County Council inspectors.

The Apple TV cameras were at the restaurant, dubbed Britain's most expensive, when health inspectors published their hygiene rating, which made global headlines.

The documentary team captures behind the scenes footage as the two-star Michelin restaurant, that charge £468 per person for a 30-course tasting menu, reacts to its hygiene rating and pushes for the elusive third star from Michelin inspectors.

Gareth says in the show: “I will defend it and I’m very proud of my whole team.

“There’s nothing in there that’s amateurish.

“Everyone instantly jumps on and thinks it’s about cleanliness. I run a spotless kitchen.

“We serve a lot of raw food and we do a lot of things that aren’t normal.

“We have done some things wrong but we don’t deserve everything. We dare to be different.”

The restaurant has since gained a five star hygiene rating.

Another west Wales chef to feature in the programme is former SY23 chef, Nathan Davies as he endeavours to achieve a Michelin star at new restaurant Vraic in Guernsey.

Nathan moved to the island following the closure of SY23 in 2023 and the cameras show his endeavours to gain a star for the coastal restaurant rooted in the island’s seafood, produce and freshly foraged seaweed.

Ultimately, Nathan was successful with Ynyshir still pushing for that third star.
